Lunch today - time pressed, but make it healthy. Vegetable gyoza (from @traderjoes) and spinach steamed, then sautéed with tofu (that I roasted earlier this week) and seasoned with tamari, hot pepper sesame oil, furikake (also from TJs) and served with raw red cabbage and sliced radish. Hit the spot. This is a PSA to always keep red cabbage in your fridge - it’s dirt cheap, lasts forever, and gives you major nutritional bang for your buck. #eattolive #hownottodie #quickveganlunch #vegantraderjoes #furikake #vegetablegyoza

Back in my egg eating days, I loved making omelets

Back in my egg eating days, I loved making omelets because they were a perfect way to use up veggies in my fridge and then have a very quick meal made in the process. I no longer consume eggs but I miss the convenience of omelets. Enter vegan fried rice! It basically accomplishes the same thing that my old omelets did... find some fresh or cooked veggies, chop them up along with garlic and/or onion, fry in a small amount of olive or avocado oil, throw in day old rice, add tamari, a splash of rice vinegar... when everything is heated through, hit it with a palmful of sesame seeds and a bit of hot sauce and toasted sesame oil, if you like. Fast, healthy, very adaptable and customizable - my favorite kind of meal.

When I first enrolled in cooking school, the main impetus behind my career change was a sincere, indiscriminating love of all things culinary. I was eager to learn how to cook everything and anything well, if it meant making me a better chef in the eyes of my peers (admittedly including preparing - but never tasting - things like foie gras and rabbit 😢). I was able to separate myself from the food I was cooking, however misaligned it was with my ethics. I wanted to be taken seriously as a chef. I wanted to be “all in”.
Now I know you can be food-obsessed without preparing, eating or romanticizing things that don’t feel right to you. You can still love food and everything that comes along with sourcing and selecting it, cooking and savoring it - but just be more discriminating about it all. For the last 7 years or so, I no longer cook animals as a part of my lifelong culinary training. I’m honing my craft on foods that support my health and make me feel my best. I’d much rather that than the fleeting pleasure that comes with consuming a “decadent” meal that is harming me, or somebody else. I’ve released the need to be taken seriously as a chef by some antiquated notion of what that means by a group of mostly older, white men - somehow, if I’m not cooking organ meat with lots of butter, I’m not really doing my job. My job, as I’ve defined it, is to create delicious recipes that will, first and foremost, make you feel good. They’ll also be gentle on the planet and all its inhabitants. And if I’ve done that, I have something to be proud of.

Plant based abundance! I love the huge variety of foods available on a vegan diet - I never get bored, or feel deprived with such a vast array of plant foods to enjoy. I had some leftover tempeh tikka masala (riffed off of @sweetpotatosoul yummy recipe), but wanted a bit more color so added extra cayenne, avocado, diced tomato, cilantro and broccoli sprouts (obvs). So fresh, flavorful, and filling (without weighing me down!). 🌈 🌱
